- Heat oven to 325°F.
- Using a mixer, beat softened cream cheese, sugar, vanilla, and lime juice until nicely blended. Add eggs and beat until just blended.
- Pour into 6 oz. pie crust.
- Transfer into preheated 325°F oven and bake 35-40 minutes or until the center is just about set.
- Refrigerate 3 hours. Topping is optional. My favorite is sliced fresh strawberries or canned cherry pie filling.
