Pizza Dough (or use premade)
- 1 cup water warm from tap
- 2 Tbsp olive oil or other vegetable oil
- 1 Tbsp sugar
- 1 tsp salt
- 2 cups bread flour or all-purpose flour
- 2 Tbsp Vital Wheat Gluten optional for extra chewiness
- ½ tsp garlic powder optional
- ½ tsp active, dry yeast can be quick rising, instant, or bread maker yeast
Shaping Pizza Dough
- 1 Tbsp oil only for coating skillet
- 1 Tbsp corn meal or semolina flour, for reducing dough sticking in skillet
- 2 Tbsp flour on working surface
Pizza Toppings (in order)
- ½ cup tomato-based sauce choices: tomato, spaghetti, pizza, Ragu, or marinara
- ¼ lb pork sausage cooked and crumbled
- 8 oz mozzarella cheese shredded
- ⅓ medium bell pepper diced small
- ⅓ medium onion purple or sweet
- ½ medium tomato seeds removed; diced
- 2 oz deli ham about 2 slices; diced medium
- ⅔ tsp Italian Seasonings or Oregano
- 2 Tbsp parmesan cheese grated (from shaker)
- 1½ oz Pepperoni slices
Instructions
- Make your pizza dough using a bread maker recipe or make your pizza dough homemade by hand recipe.1 cup water, 2 Tbsp olive oil, 1 Tbsp sugar, 1 tsp salt, 2 cups bread flour, 2 Tbsp Vital Wheat Gluten, ½ tsp garlic powder, ½ tsp active, dry yeast
- Preheat the oven to 500°F. Prep the cast iron pan by coating the cooking surface with oil. Sprinkle corn meal across the same pan surface.1 Tbsp oil, 1 Tbsp corn meal
- Rollout dough and place into the coated pan, stretching it out to be against the round edging.2 Tbsp flour
- Add the sauce and your choice of toppings in the order shown. All toppings are optional.½ cup tomato-based sauce, ¼ lb pork sausage, 8 oz mozzarella cheese, ⅓ medium bell pepper, ⅓ medium onion, ½ medium tomato, 2 oz deli ham, ⅔ tsp Italian Seasonings, 2 Tbsp parmesan cheese, 1½ oz Pepperoni slices
- Transfer topped pizza onto baking surface in preheated 500°F oven onto the 2nd from upper shelf.Baking TIME guidelines: cast iron pan (20-24 minutes or preheated iron pan 16-22 minutes).
- When done, remove pan from oven and let sit for 5 minutes before slicing. Can slice directly in pan and serve.

The Lodge Cast Iron Pizza Pan
For clarification, this is about the pizza on the cast iron PIZZA PAN and not in the cast iron SKILLET. The pizza pan is not deep and either no edging or just a minimal raised edge around its perimeter. It literally is similar in shape and usage as regular metal pizza pans. Types of Lodge Cast Iron Pizza Pans
As of this writing, there is more than one type and size of Lodge cast iron pizza pans. The main two types are between the ones that have no edge and the ones that have a raised edging. Personally, I use the ones with the raised edging so it will hold all the toppings better.
Buyer’s Tip: There are several cast iron brands and some resellers will provide silicon handle coverings for pizza pans. Unfortunately, that might lead you to believe you’re getting the better pizza pan due to the higher pricing so, check in the details and compare pans and prices without the silicon coverings.
How To Maintain And Season The Lodge Cast Iron Pizza Pan
After it’s cooled down, you can wash it’s cooking surface with soap and water. However, some will just want to use coarse salt (or coarse sea salt). But, others will use the coarse salt and running water. Regardless of any method you choose, give it a good scrubbing. If you choose to use water, rinse it thoroughly when done scrubbing it. Wipe it thoroughly dry. I use paper towels for that. Some will wait overnight for it to dry more completely. Whether you wait or not, the next step is to lightly coat the interior cooking surface with olive oil. Then, wipe the excess oil off. Again, I use a different paper towel for that. Then, you store it away.
Making Pizza On The Pizza Cast Iron Pan
Prepare the Pizza Cast Iron Pan
When using for pizza, you’ll coat the cast iron pizza pan with some olive oil. Then, sprinkle some corn meal (or semolina flour) across it. That will help ensure your pizza won’t stick to the bottom.
Prep The Pizza Dough
You can use store-bought pizza dough or make your own. Here are two ways to make it yourself.
Then, roll out your dough on a floured surface. When sized about right, place it onto the pizza cast iron pan. Finish by shaping, trimming, and stretching it to reach the border pan edge all around.
Add The Sauce
Now, add a tomato-based sauce such as those listed here. It doesn’t have to be exactly a “pizza sauce”.

Add any Sausage & Cheese
Next, if you’re using sausage, add it next (precooked). Then, you add the shredded mozzarella cheese. Optionally, you can also add in some provolone, parmesan, and Asiago cheese. However, for Asiago cheese, just add a small amount like 2 ounces. That’s because Asiago is very strong but you’ll love its added flavor.
If using sausage, add it next. Then, add shredded mozzarella cheese and any other cheeses like provolone, parmesan, and/or Asiago.
Add the Toppings
Now, any of the veggies and other meats (like ham or salami) can be added in any order. However, if you’re going to use Pepperoni, don’t add it on just yet; that’s a little later.
Add any final veggies and remaining meat toppings (except pepperoni, if any).
Add the Spices and Final Toppings
Now, you sprinkle on Italian seasonings or Oregano or whatever spices are called for specifically in the pizza recipe. Then, if you’re wanting an extra cheesy pizza, you’ll add on a little more mozzarella cheese next.
Finally, the last topping to ever use is Pepperoni, if you’re having it. It’s the one meat that should always go on as the last topping.
Final is Italian seasonings (or Oregano) and Pepperoni, if any is to be used.
Baking Pizza On The Pizza Cast Iron Pan
Now you place the filled pizza case iron pan into the preheated oven on the 2nd from the top shelf. Usually the cook time is about 20-24 minutes for this iron pizza pan but verify it with the pizza recipe.

Safety Tip: Since pizza recipes often call for a high heat, most silicon protective handle coverings can’t handle it. So, I never use them for iron pizzas pans.

After your pizza’s done, leave it for at least 5 minutes before slicing. Then, you can comfortably leave the pizza on the cast iron pan and it will keep future helpings hot for awhile.

About Preheating the Pizza Cast Iron Pan
The average person will find it much easier to just make the pizza directly in the iron pan on the countertop and then place it all into the preheated oven for baking.
There are, however, other more experienced pizza makers who will have a pizza peel and will know how to use a pizza peel.
In those cases, they will preheat the empty cast iron pizza pan along with the oven. Then, when the raw, prepped pizza is ready, they’ll use the pizza peel to transfer it from the countertop onto the hot, preheated cast iron pizza pan in the oven.
The choice is yours. However, if you choose to bake a pizza on a preheated cast iron pizza pan, reduce the cook time by about 2 to 4 minutes less. I use both methods routinely. The pros will say the flavor is better when placed on a preheated pizza cooking surface.
