Instructions
Preheat pan or skillet to medium heat on burner.
Add oil and swirl around to coat pan completely and get hot briefly.
2 Tablespoon vegetable oil
Crack each egg into hot pan. Then, choose just 1 of the following cooking methods.
4 large eggs
Method Choice 1: SLOW Cooking. Cook eggs slowly by reducing heat to medium low. Takes about 4-5 minutes to ensure white part is fully cooked.
Method Choice 2: BASTING Cooking. Keep heat to medium and tilt pan to baste hot oil over each egg. Add more oil if needed. Keep repeating basting until each has a foggy film across the yolk. Takes about 2 minutes.
Method Choice 3: STEAMING Cooking. Add a tablespoon of water to pan and cover immediately. Spot check after 1 minute and remove cover when each egg has a thin film across its yolk. Takes about 1-2 minutes.
Use spatula to cut a separation between any joined eggs. Then, dig, scrape deeply, and lift out each egg. Allow some quick draining and then serve each on a plate or serving platter.
