This stir fried rice and pork casserole recipe is a quick stir fry pork and then bake casserole. It's perfect for a fried pork sesame flavored dish and is perfect for new or leftover pork.
Cut up pork into small cubes in a bowl and coat with garlic, salt, and sesame oil.
1½ lbs boneless pork, 2 Tablespoon sesame oil, 1 teaspoon minced garlic, ½ teaspoons salt
Preheat oven to 375 °F.
In a hot pan (or wok), stir-fry meat mixture at medium-high (or high). Drain off excess liquid, as needed. When done, after about 5 minutes, put into bowl and set aside.
Using same hot meat pan (or wok), stir-fry veggies rice mixture on medium-high for about 4 minutes. Scrape the bottom each ½ minute.
Pour in the seasoning solution, mixing well, scraping bottom, and cooking 1 minute.
Add the cooked meat into the vegetable rice mixture. Distribute it well and evenly. Turn off the burner.
Add the cooked mixture into the greased casserole dish.
Make depression craters in the mixture and add into each 1 raw egg. Using a fork, break each yolk and very slightly mix each partially into the casserole mixture.
6 large eggs
Bake in preheated 375 °F oven for 35 minutes, uncovered, middle rack.
