Preheat oven for

Combine all dry ingredients in a bowl and mix thoroughly.
⅔ cup all-purpose flour,
1⅓ cups cornmeal mix,
1 Tablespoon baking powder,
1 teaspoon salt,
½ cup sugar,
1 teaspoon baking soda
Mix in the wet ingredients by hand to create a simple batter.
2 large eggs,
1⅓ cups buttermilk,
3 Tablespoons oil
Oil the 9x5 loaf pan (metal or glass) and add batter into it.
Bake uncovered on middle shelf at
375
°F
for 25-35 minutes (or
350
°F
for 45 minutes). When done, let it sit for 5 minutes; then, cut and serve.
Notes
If batter is too dry, add more milk. If too thin, add more flour.
