Ingredients
- 4 cups all purpose flour optional self-rising flour
- 2 Tbsp baking powder don't use if using self-rising flour
- 2 tsp salt reduce by half if using self-rising flour
- 2 tsp baking soda
- 2 Tbsp sugar
Instructions
- Add flour into a medium or large mixing bowl.4 cups all purpose flour
- Add all remaining ingredients distributed across the flour. If using self-rising flour, see notes on dropping baking powder and reducing salt in half.2 Tbsp baking powder, 2 tsp salt, 2 tsp baking soda, 2 Tbsp sugar
- Use a whisk or fork to thoroughly combine all ingredients, distributing evenly.
- Store in an air tight food container suitable for dry goods. Store in pantry or shelf.
Notes
For every 1 cup of pancake mix, add 1 egg, 3/4 cup buttermilk, 1 Tbsp oil, and 1 tsp vanilla extract.

As a former restaurant manager, here’s how to convert pancake mix into waffle mix. A small change, is to reduce the baking soda by half but, that can be skipped if you already have the mix made. So, with that said, you’ll really be converting the batter. So, follow your pancake batter recipe but make these changes to end up with an excellent waffle batter.
- Double the amount of eggs.
- Also, double the amount of oil.
- Finally, instead of mixing the batter mildly & leaving lumps, you’ll mix it thoroughly to remove the lumps. That’s it!
Can I use milk instead of water in pancake mix?
It depends. Some pancake mixes call for water because they might contain a dry powdered milk already. However, I’ve tried a lot of mixes and they don’t seem to have much dry dairy added so, adding milk makes it a lot better. However, I will generally add 1/2 water and 1/2 milk. But, with the cheaper brands, I would use all milk.
All of my own homemade pancake and waffle batter recipes only use all milk and no water.
