This chicken salad sub recipe is one of the simplest to pull together. And it's a great change-of-pace for fresh or leftover chicken salad.

Chicken Salad for Subs INGREDIENTS

cooked chicken
diced or cubed

stalk
celery
diced
▢
⅓
cup
carrots
diced or shredded

mayonnaise

Tablespoon
parmesan cheese, grated

teaspoon
ground black pepper
Instructions
Cut the sub rolls in half, lengthwise. Remove excess interior breading to allow for adding sub ingredients.

If not using leftover chicken salad, combine the "Chicken Salad for Sub Ingredients" and set aside.
½ lb cooked chicken,
1 stalk celery,
⅓ cup carrots,
3 Tablespoons mayonnaise,
¾ Tablespoon parmesan cheese, grated,
⅓ teaspoon ground black pepper
Option: Spread on the mayonnaise.

Add on the chicken salad
Cut the provolone slices in half and add 2 halves to each sub.
2 slices provolone cheese
Option: Add lightly the Italian dressing.
2 Tablespoons Italian dressing
Fold the subs closed and (optionally) cut in half to serve.
