1 cast iron skillet
Ingredients
Pizza Dough (or use premade)
1cupwaterwarm from tap
2Tbspolive oilor other vegetable oil
1Tbspsugar
1tspsalt
2cupsbread flouror all-purpose flour
2TbspVital Wheat Glutenoptional for extra chewiness
½tspgarlic powderoptional
½tspactive, dry yeastcan be quick rising, instant, or bread maker yeast
Shaping Pizza Dough
1Tbspoilonly for coating skillet interior
1Tbspcorn mealor semolina flour, for reducing dough sticking in skillet
2Tbspflouron working surface
Pizza Toppings (in order)
½cuptomato-based saucechoices: tomato, spaghetti, pizza, Ragu, or marinara
Preheat the oven to 500°F. Prep the cast iron skillet by coating the interior bottom and interior sides with oil. Sprinkle corn meal across the bottom inside the skillet. However, if planning to preheat skillet, skip oiling and adding corn meal to skillet.
1 Tbsp oil, 1 Tbsp corn meal
Rollout dough and put into the skillet, ensuring full contact with bottom and sides. Cut along the outside skillet top edge to remove excess dough.
2 Tbsp flour
Add the sauce and toppings in order. All toppings are optional.
½ cup tomato-based sauce, ¼ lb pork sausage, 8 oz mozzarella cheese, ⅓ medium bell pepper, ⅓ medium onion, ½ medium tomato, 2 oz deli ham, ⅔ tsp Italian Seasonings, 2 Tbsp parmesan cheese, 1½ oz Pepperoni slices
Insert pizza skillet onto 2nd from top shelf rack in a preheated 500°F oven. Bake uncovered with times as guidelines for skillet diameter size:10-12 inch (this recipe): 16-24 minutes or preheated skillet 14-20 minutes6-inch: 14-18 minutes or preheated skillet 12-16 minutes14-16 inch: 20-28 minutes or preheated skillet 18-24 minutes
When done, remove skillet from oven and let sit for 5-10 minutes before slicing. Can slice directly in skillet and serve.
