Ingredients
1largecucumberabout 8-inches
2largetomatoes
1mediumpurple onionor sweet onion
½cupItalian dressingor Zesty Italian dressing or Balsamic dressing
Instructions
Although not normally done, you can optionally peel part or all of the cucumber. Using about ¼-inch thicknesses, slice the cucumber and put into salad bowl.
1 large cucumber
Core and cut the bottom off each tomato. Section it to have about 8 pieces each and add into salad bowl.
2 large tomatoes
Cut the ends off the onion and peel it. Slice it to have about ⅓-inch thicknesses. Then , separate each slice into individual rings, and put into salad bowl.
1 medium purple onion
Pour the Italian dressing over the salad ingredients and toss to coat the pieces.
½ cup Italian dressing
Can serve now or refrigerate to marinate for a few hours or overnight.
Notes
You can opt to cut the cucumber and onion rings into smaller, bite-sized pieces, as is depicted in the images. Also, you can double the dressing if you're going to let it set in the fridge to marinate for a few hours or overnight.
