Pizza Dough (or use premade)
- 1 cup water warm from tap
- 2 Tbsp olive oil or other vegetable oil
- 1 Tbsp sugar
- 1 tsp salt
- 2 cups bread flour or all-purpose flour
- 2 Tbsp Vital Wheat Gluten optional for extra chewiness
- ½ tsp garlic powder optional
- ½ tsp active, dry yeast can be quick rising, instant, or bread maker yeast
Shaping Pizza Dough
- 1 Tbsp oil only for coating skillet interior
- 1 Tbsp corn meal or semolina flour, for reducing dough sticking in skillet
- 2 Tbsp flour on working surface
Pizza Toppings (in order)
- ½ cup tomato-based sauce choices: tomato, spaghetti, pizza, Ragu, or marinara
- ¼ lb pork sausage cooked and crumbled
- 8 oz mozzarella cheese shredded
- ⅓ medium bell pepper diced small
- ⅓ medium onion purple or sweet
- ½ medium tomato diced
- 2 oz deli ham about 2 slices; diced medium
- ⅔ tsp Italian Seasonings or Oregano
- 2 Tbsp parmesan cheese grated (from shaker)
- 1½ oz Pepperoni slices
Instructions
- Make your pizza dough using a bread maker recipe or make your pizza dough homemade by hand recipe.1 cup water, 2 Tbsp olive oil, 1 Tbsp sugar, 1 tsp salt, 2 cups bread flour, 2 Tbsp Vital Wheat Gluten, ½ tsp garlic powder, ½ tsp active, dry yeast
- Preheat the oven to 500°F. Prep the cast iron skillet by coating the interior bottom and interior sides with oil. Sprinkle corn meal across the bottom inside the skillet. However, if planning to preheat skillet, skip oiling and adding corn meal to skillet.1 Tbsp oil, 1 Tbsp corn meal
- Rollout dough and put into the skillet, ensuring full contact with bottom and sides. Cut along the outside skillet top edge to remove excess dough.2 Tbsp flour
- Add the sauce and toppings in order. All toppings are optional.½ cup tomato-based sauce, ¼ lb pork sausage, 8 oz mozzarella cheese, ⅓ medium bell pepper, ⅓ medium onion, ½ medium tomato, 2 oz deli ham, ⅔ tsp Italian Seasonings, 2 Tbsp parmesan cheese, 1½ oz Pepperoni slices
- Insert pizza skillet onto 2nd from top shelf rack in a preheated 500°F oven. Bake uncovered with times as guidelines for skillet diameter size:10-12 inch (this recipe): 16-24 minutes or preheated skillet 14-20 minutes6-inch: 14-18 minutes or preheated skillet 12-16 minutes14-16 inch: 20-28 minutes or preheated skillet 18-24 minutes
- When done, remove skillet from oven and let sit for 5-10 minutes before slicing. Can slice directly in skillet and serve.

How to Clean The Cast Iron Skillet
Cleaning a classic cast iron skillet is very easy. After it’s cooled, rinse it out, apply a little dish soap and scrub it out. Then, rinse it and dry it off well. For that, I use paper towels and get it very dry. Then, apply a small amount of oil and wipe it with a paper towel to make it a very thin even coating. To be sure, Lodge has their own recommended Cast Iron Skillet cleaning method, which is quite similar.

1. Prep the Pizza Cast Iron Skillet
Prepare the pizza cast iron skillet. Subsequently, apply a small amount of olive or peanut oil to coat the baking surface and interior sides. Then, sprinkle on a small amount of corn meal or semolina flour. In short, this will help prevent your pizza from sticking.

However, if you’re going to preheat the skillet, skip the application of oil and corn meal.
2. Prep the Pizza Dough
After you’ve made or bought your pizza dough, lay or roll it out to ensure it’s oversized for the skillet. Then, drape it across the skillet. Continue and press it downward and inward to ensure it has full contact with the bottom and inside walls of the skillet. Then, trim off any excess dough.

3. Add the Pizza Sauce
Apply and spread around the pizza sauce to the bottom of the dough. You don’t need any on the sides. Also, there are many tomato-based sauces you can use. It doesn’t have to specifically be a “pizza sauce”. We often use Ragu spaghetti sauce and sometimes a marinara. You can even just use tomato sauce.

4. Add the Toppings
Add Any Sausage & Initial Cheese
The first thing that goes on top of the base sauce, is going to cooked sausage. But that’s only if you’re using sausage as a topping. After that, the first cheese, typically mozzarella, is applied as a full layer. This can be your only cheese used if you want. The recipe and tips from other recipes will offer some additional ones. Finally, these extra ones are all optional.

Add Veggies and Other Toppings
After your first layer of cheese, you can now add any remaining veggies and meats. The only suggestion is, if you’re going to have pepperoni, wait until later. These veggie and meat toppings can go in any order.

Finish with Spices and Final Toppings
After your key toppings are added, sprinkle it with any spices, usually just Italian seasonings or Oregano. Then, if you want a very cheesy pizza, you’ll add another layer of Mozzarella. Finally, if you’re deciding to have any pepperoni, you add it as your final topping.

5. Baking The Pizza In The Pizza Cast Iron Skillet
Now you’ll slip your pizza cast iron skillet into the preheated oven. Depending on the skillet size and the amount of toppings, your bake time will vary. So, just go by what the recipe calls for. In a typical 12-inch cast iron skillet (not preheated), mine usually bake around 20-24 minutes.

After the pizza’s done, you’ll remove it from the oven and set it aside for about 5 minutes minimum. Avoid the urge to cut into it right away. Then, after the wait time, you can cut the slices directly on the cast iron skillet. Slicing pizza in a skillet is not as easy on the sides though. So, you might need to use a knife or kitchen scissors to separate the slices.

A lot of other online recipes will call for you to preheat the skillet but I usually don’t It’s not as safe to work with placing dough into it. There are 2 important tools that most serious pizza creators will have.
The first pizza tool is a pizza slicer. I use the rolling slicer, like most people have. They do make a large 2-handled rocker type but I find it very bulky. It’s really intended for the very serious professionals and is perfectly suited for the super experts.

The second pizza tool is a pizza peel. It’s a very important piece to have for transferring a prepped pizza from the countertop onto the hot, preheated pizza bakeware in the oven. Baking pizza on a preheated surface does make the pizza taste better. Also, it cuts the baking time down.

One of the advantages of making a pizza cast iron skillet recipe is you can optionally make it as a deep dish pizza. The way you do that is two things. Firstly, ensure the pizza dough goes up the sides of the skillet. Secondly, load up on the toppings. You can do that by either increasing the amount of any toppings or by increasing the variety of different types of toppings. So, with that in mind, you’ll need to cook it about 2-3 minutes longer.
