Ingredients
 

  • 3 cans canned black beans 14-16 oz cans; Bush's is our preferred brand
  • 1 cup vegetable broth
  • 1 cup Pico de Gallo leftover or fresh
  • 1 tsp ground cumin
  • cup water optional depending how thick you prefer youe soup

Instructions
 

  • Open and drain beans. Add all ingredients to blender and blend until smooth.
  • Transfer blender ingredients into medium saucepan. Cook on medium until reaching a soft boil.
  • Dish out, add an optional dollop of sour cream or garnish. Enjoy!

Notes

For a 4 servings soup recipe, here’s the ingredients for 1 cup of Pico de Gallo to add to the blender:
  • ½ cup diced tomatoes Alternately, use canned drained diced tomatoes
  • ½ cup diced sweet onion
  • ½ pepper jalapeno Slice down the middle, remove the seeds, and chop small.
  • ¼ cup cilantro, freeze dried Alternatively, use fresh chopped leaves, about ½ quantity more.
  • ½ Tbsp. lime juice Can use more to taste.
