- ⅓ cup tomato sauce
- ⅓ tsp ground cumin
- ½ tsp cilantro freeze dried or fresh; or ½ as dried seasoning
- 1 tsp lime juice
- ⅓ tsp onion powder
- ¾ cup white rice
Seasoned Black Beans Ingredients
- 1 Tbsp olive oil or vegetable oil
- ½ large onion diced, yellow or sweet
- 15 ozs canned black beans 15 oz can, not drained
- 1 tsp garlic powder or double amount minced garlic
- 2 Tbsp cilantro freeze dried or fresh; or ½ as dried seasoning
- ⅓ tsp ground cumin
Refried Beans
- 1 can refried beans 16 oz. can
Seasoned Chicken Ingredients
- 1 lb chicken breast cooked and diced, cubed, strips, chopped, or shredded
- ⅓ tsp Garlic Powder or double amount minced garlic
- ⅓ tsp onion powder
- ⅓ tsp ground cumin
- ⅛ tsp Ground Black Pepper
Instructions
- Make Mexican rice: Combine all "Mexican Rice" ingredients (except the rice): and bring to a boil. Add rice, cover, turn OFF heat, and let sit for 25 minutes. Set aside.1½ cup water, ½ Tbsp butter, ⅓ cup tomato sauce, ⅓ tsp ground cumin, ½ tsp cilantro, 1 tsp lime juice, ¾ cup white rice, ⅓ tsp onion powder
- Make Seasoned Black Beans: Sauté onions in oil for about 5 minutes. Then, add in the rest of the "Seasoned Black Beans Ingredients" and heat up for about 5 minutes. Set aside.15 ozs canned black beans, ½ large onion, 1 Tbsp olive oil, 1 tsp garlic powder, 2 Tbsp cilantro, ⅓ tsp ground cumin
- Heat up Refried Beans in a small saucepan or microwave and set aside.1 can refried beans
- Make Seasoned Chicken: Cutup chicken, combine with its seasonings, cook, and set aside. Or optionally, cutup leftover cooked chicken and heat up all combined.1 lb chicken breast, ⅓ tsp Garlic Powder, ⅓ tsp onion powder, ⅓ tsp ground cumin, ⅛ tsp Ground Black Pepper
- Serve each bowl, layered in this order: rice, black beans, refried beans, chicken, toppings (e.g., shredded lettuce, diced tomatoes or salsa, sour cream).
