How To Make London Broil Beef Stew Slow Cooker Recipe
Put the slow cooker on low. Prep the veggies into medium sized pieces. Then, flour the London Broil meat. After that, add everything in order, ensuring the meat’s on the bottom. Finally, put the lid on the slow cooker and come back in 6 hours. It’s ready!
Cube the London Broil and toss into the slow cooker.
You don’t have to braise (brown) the meat first. That’s an important step to keep if you not using a slow cooker, though. Not having to braise the meat is a big bonus also because it’s one less pan involved in cleanup.
Add flour over the London Broil cubes.
Add spices & onion. Then, stir up everything real well. After that, the meat cubes will become coated with flour and spices.
Finally, because of layering the meat on the bottom of the crock pot, and ensuring the veggies are on top, the veggies won’t cook as fast due to no direct contact with the bottom heating element. This results in them not being excessively soft or mushy.
Add remaining vegetables (and any extras you want like peas or corn) on top. Then, be certain you do NOT stir up anything. Cover and cook on low for 6 hours.
After cooked, gently stir things up and break the London Broil meat apart. Serve with your favorite sides, especially with a crusty bread slice.

What can I do to make my Beef Stew vegetables not mushy?
To prevent mushy veggies in beef stew, put them into the crockpot on top of the meat. Crock pot temps and times are varied across different brands and models. If you find your veggies are too mushy, first check to see if you put the crock pot on LOW. If it’s on low (or you only have one heat setting), put them into the crock pot later. Usually, the most irritating veggies to get too soft are the potatoes and the carrots. So, you can consider putting them into the crock pot about 1-2 hours after the start of the cooking process.
Don’t you usually cook potatoes before putting them into the Beef Stew?
No. They’d be too soft by the end of the stew cooking process. Also, they wouldn’t be as flavorful.
Is there anything extra that makes this beef stew crock pot healthy?
Yes. One item is that you do have lots of vegetables but, we’re also leaving the skin on the potatoes. Peeling the potatoes is a step that can be forgone and isn’t necessary. By leaving the skin on, it has some good added healthy nutrients. Mostly, it adds a lot of fiber (about equal to the potato itself) but also it’s good in iron. The rest of the skin’s nutritional values are minor levels but there are a few more.
I’m out of Beef Broth. Can I use Chicken Broth?
You can. The flavor will be different but it will still taste okay. Overall, you’re better with vegetable broth as a substitution.
There are others saying you can replace it with Worcestershire Sauce or Soy Sauce but, I don’t recommend those two. Those 2 ingredients have flavors that are extremely strong and, with even a small amount, it won’t taste anything like a beef stew. Also, the Soy Sauce will make it too salty.
