Ingredients 

  • 5 Lbs Turkey Breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups water only for drip pan on grill

  • From grill, remove top grill grate and set aside. Start up grill for preheating. Prepare for indirect heat and to have a drip pan of water for later to be under the turkey. Open up all vents 100%.

  • Open up and discard the inner turkey packets or innards as desired. Ensure all items are removed from the cavity. Rinse it off thoroughly and pat dry.

  • Rub seasonings (1 tsp salt, ½ tsp black pepper) over all sides of meat. No oils are necessary.

  • From the grill, if using charcoal, safely position coals for indirect heat & for refilling. Insert drip pan into position (not on top of coals).
    Place top grill grate back in place and pour 2 cups water into drip pan.

  • Change bottom vent to be only ⅓ open. Cover grill with lid (top vent fully open). You'll want to maintain about 350 °F.
    After 1st 40 minutes, add charcoal if needed, turn turkey over (breast side down or to side), and recover grill's lid.
    After 2nd 40 minutes, turn over turkey again (breast side up or to 2nd side), & check internal temp. If internal temp is about 145 °F, consider about 20-30 minutes more cook time. Adjust time as needed.
    Final minimum internal temp should be 165 °F.

  • When proper internal temp is reached, remove turkey from grill, and set aside to rest for about 10 minutes before carving. The rest time will lock in its juices. Then, carve and serve.

    This is great. Mine was about 7 pounds but still took only about 2 hours. I kept the temp a little lower at 325F.
