Ingredients 

  • 2 Tbsp butter
  • 4 stalks celery diced
  • 1 medium onion diced
  • 3 Tbsp all-purpose flour
  • 4 cups milk recipe uses 2% milk
  • ¾ tsp chicken bouillon granules
  • ½ tsp Ground Black Pepper

Instructions 

  • Dice celery and onion. Then, add to a medium pot on stovetop, along with butter and spices.

  • Cook on medium-high heat for 7-10 minutes. While cooking, stir every 1-2 minutes, scraping the inside pot bottom.
    2 Tbsp butter, 4 stalks celery, 1 medium onion, ¾ tsp chicken bouillon granules, ½ tsp Ground Black Pepper

  • Add flour and mix in well to coat everything. Immediately add in some of the cold milk (about ½ to 1 cup. Stir constantly until fully thickened and bubbling. Then, pour in remaining milk. Stir a few times each minute until boiling again.

  • Finish soup by choosing only 1 of the following thickening options.
    Option 1 (fastest): Reduce heat to medium, stirring and scraping pot bottom each minute, for about 5-10 minutes until thickened to your liking.
    Option 2 (less work): Reduce heat to simmer, cover, and return in 15 minutes to stir and confirm desired thickness. If not thick enough, increase heat to medium, stir once each minutes, until thickened enough.

Notes

For even more heartiness, you can add in some diced or shredded carrots. Just add them in the same time you add the other vegetables.
